Cucumber Blunder
Chicken Soup

A fresh take on Chicken Soup, clean & clear absolutely no gloop

Cucumber Blunder meets chicken, ain’t no mistake - the sauce itself was inspired my favourite childhood dish, my mum’s Hainanese chicken rice. Whether you use cabbage & potatoes or Chinese leaf and noodles, this Soup just makes you feel warm inside and out!

INSTRUCTIONS

SSERVES 4 OR 6 ITTLE PEOPLE

  • Boil the kettle for the stock
  • Pour into casserole dish and add stock
  • Pour in Cucumber Blunder
  • Add new potatoes
  • Add chicken thighs and pancetta
  • Stir, cover and simmer for 25 minutes
  • Add sliced cabbage
  • Stir in
  • Leave for 2 mins
  • Serve into bowls or straight to the table
  • Grated cheese to sprinkle on top

  • 1 bottle Tanya's Just Real Cucumber Blunder
  • 6 skinless chicken thighs (whole or sliced)
  • 1-2 cubes chicken stock
  • 10-12 baby new potatoes
  • savoy cabbage
  • pancetta
  • grated cheese (optional)
